Calling All Potatoes

Time to get your potatoes in the ground. Typically, growers order potato ‘seed’ from a lab because it has been kept clean from disease. We order from Grand Teton Organics in Idaho, but there are also more local producers of potato seed. My dad used to take potatoes from the store, grow them until they got their ‘eyes’, slice them up so there were a couple of eyes per potato, dry them on a towel til the skin re-scabbed over, then plant them. We like to dig a trench a 1-2′ deep, lay potatoes 1′ apart, cover with a few inches native soil, then layer in compost/soil as the potatoes reach up through the ground.
